| Description: | Greene County Parks & Trails highlight farm to table movement with hands-on cooking program with local chef Join Greene County Parks & Trails as well as local chef Mariano Rios from La Pampa Catering in Yellow Springs to learn how to prepare a gourmet meal utilizing the freshest locally grown foods beginning at 5 p.m., Sunday, Aug. 19, within the serene setting of Clifton Lodge Reserve along the Little Miami River. Chef Mariano Rios has cooked all over the world with a specialty in Argentinian fare. The menu will include peach pie, salad with locally grown greens and fruit and garlic chicken featuring locally and organically grown poultry. Participants will both observe and participate before enjoying the meal. La Pampa is named for the region where Mariano Rios, the business' owner and cook, was born and raised in Argentina. Mariano's father worked herding sheep and cattle, and later as a professional butcher for many years. Mariano discovered the art of the 'asado' and 'parrilla' fom his father, who to this day grills the best whole cuts in town. Mariano now lives in Yellow Springs with his wife of nine years, Luisa, and their three-year-old son, Tome. Mariano has cooked in Argentina, Spain, Portugal and Italy as well as honed a farm-to-table local, seasonal foods emphasis from his years on Woodberry Kitchen's original team of cooks, mastering the wood burning oven. Rios comes from a place where barbecue is the main affair on a Sunday at home with the family. The day includes drinking, talking, connecting, and eating a slow-cooked preparation of the meats and vegetables that have been grown on the surrounding plains. This summer, Rios brings that tradition of his home in Argentina to Yellow Springs with his grilling and catering business, La Pampa. Cost for the program and the meal is $60, Greene County resident; and $70, non-resident.
